Easy Korean Chicken Recipe for that K-Pop Feels

In celebration of Hyun Bin’s birthday, cozsho tapped @Mumshiecooks to give us the recipe of her famous Yangnyeom chicken with side coleslaw dish for a korean feast you can re-create at home! It’s simple and delish, perfect for sharing with your yeobo.

Yangnyeom Chicken with Side Coleslaw

Prep Time: 30 mins. (excluding marinating the chicken, which is recommended to be 2 hours, at least)

Total Time: 2 hours and 30 minutes

Serves: 2 - 3


Ingredients:

For the chicken marinate:

  • 1 kg chicken thigh fillet

  • 1 tsp. salt

  • ½ tsp. pepper

  • 2 tsp. garlic

  • 1 tbsp. rice wine

For the Yangnyeom sauce:

  • 2 tbsp. gochujang

  • 2 tbsp. tomato ketchup

  • 1/4 cup honey

  • 1/4 cup brown sugar

  • 2 tbsp. soy sauce

  • 1 tbsp. sesame oil

  • 2 tbsp. minced garlic

  • 2 tbsp. mirin

  • 1 tbsp. rice wine

For the Side Coleslaw:

  • 5 cups cabbage, shredded

  • 1 cup carrots, shredded

  • 1 sachet, pineapple chunks

  • 1 cup mayonnaise

  • 1 tbsp. Dijon mustard

  • salt and pepper, to taste

Directions:

  1. In a large bowl, combine all the chicken marinate ingredients together. Set aside for at least 2 hours.

  2. Fry the marinated chicken approximately 5-7 mins. Do not overcrowd the pan. Take out the marinated chicken and place them on a paper towel. 

  3. In a separate saucepan, add the Yangnyeom sauce ingredients. Boil the sauce over low medium heat and stir well. Remove the pan from heat once the sauce starts boiling.

  4. Place the marinated chicken into a large mixing bowl, and then pour the Yangnyeom sauce over the chicken. Mix them lightly, but thoroughly. Serve it hot immediately.

  5. For the coleslaw, toss all ingredients together. Mix well and serve chilled.
